Domaine Chandon Barrel Selection Chardonnay 2016
Chardonnay is enjoying huge growth in consumption in Australia at the moment, with winemakers offering a range of styles focusing on fruit, complexity and lower oak contribution. Here at Domaine Chandon we capture the pristine varietal characters of cool climate vineyard sites and ensure our wines express great style and elegant sophistication.
Pale and crystal clear with green edges. White flowers and bright citrus aromas, lime and grapefruit, with subtle pear and gunflint character in the background. Pear, citrus and nougat flavours present on the palate, with seamless balance of finesse and power. Delicate cinnamon and vanilla spices support fine acidity and good intensity lead the long and persistent flavours.
The Chardonnay grapes for this Barrel Selection Chardonnay 2016 were sourced from our coolest vineyard site in the Upper Yarra Valley. Mature vines managed with meticulous care and detail yielded very low volumes, but terrific intensity. This allowed the grapes to achieve full flavour ripeness in conjunction with well-balanced sugar and acid levels.
Grapes were whole bunch pressed and the juice was then transferred to barrels where fermentation began spontaneously due to wild yeast. Temperatures were not controlled and warmer ferments have delivered some reductive complexity. No malolactic fermentation took place and the wine underwent limited barrel stirring prior to ageing in French oak for nine months. As the newer the barrel, the stronger the oak influence is on the wine, no new barrels were used in this blend.
Food Pairing Notes
Crab linguine; Scallops carpaccio with radish and apple; Chicken with cream and mushroom.
Good winter and early spring rains provided perfect conditions for strong shoot and leaf growth. Warm spring conditions led to an early budburst followed by early flowering. Clear and dry summer weather prevailed, with some brief rain in January, just enough to slow the ripening and carry the soil moisture through to harvest. Warm days through February without extreme heat events ensured full ripening of mature grapes.
