Domaine Chandon Barrel Selection Shiraz 2015
The cool climate of the Yarra Valley produces Shiraz fruit of consistently high
quality. At Domaine Chandon we capture these pristine varietal characters
and ensure our wines express regional integrity, great style and elegant
sophistication. Our Barrel Selection wines represent the best barrels of the
vintage, drawing from our diverse and exciting parcels of grapes.
Bright purple, medium density with good clarity. The wine shows classic cool-climate aromas of dark plum and violet aromatics, balanced by bright blackberry fruit and nutmeg spice aromas. The palate opens with fine Shiraz berry and dark plum flavours, then expands
with complex floral characters and “Persian spice box” aromas of cinnamon, rose
petal and dried jasmine blossom. Tannins are fine like cocoa powder and serve
to balance the supple acidity. Length is supported by balanced medium-bodied
structure and excellent persistence of flavour.
This 2015 Barrel Selection Shiraz draws from two vineyards both in the Coldstream
area of the Yarra Valley floor. On our doorstep at Yeringberg, mature vines grow
on a north facing slope which has been pruned and managed for quality, with two
Shiraz clones known for spice and perfume characters. Closer to Coldstream, on
a warm west-facing hillside, Shiraz vines grow in harsh, rocky soil and produce
grapes with concentration and character.
The Shiraz grapes were partially destemmed with three different treatments of up
to 100% whole bunches and chilled before a prefermentation maceration of three
days. This allowed for the evolution of tannin and supple structure, before the
onset of alcoholic fermentation. Following this cold soak, the must was plunged
by hand three times daily to encourage extraction of colour, flavour and tannins.
The resultant wine was pressed before dryness and allowed to finish fermentation
in small and large French oak barrels, using best quality French oak barrels.
No new oak was used in this final selection. This was followed by malolactic
fermentation in barrels and a further 11 months ageing with one careful racking.
These three parcels were tasted and assessed barrel by barrel to determine the
optimum balance and composition. The wine was gently filtered prior to bottling.
Food Pairing Notes
Beef cheeks braised with mashed potato; Duck leg confit with plum; Roast lamb
with rosemary potatoes.
Mild conditions in late winter and a favourable start to spring resulted in an early
budburst for varieties such as Pinot Noir and Chardonnay. Late spring and early
summer provided ideal conditions leading into veraison. Summer remained mild,
with few days in excess of 35°C. This, combined with good canopy cover and
cool nights, resulted in one of the best vintages for early varieties since 2002.
Abundant flavour with some of the best acid balance we have seen shows amazing
promise for the complexity and longevity of the 2015 wines.
