This special terroir specific wine draws from what we consider to be one of Victoria’s great sparkling vineyard locations - the Whitlands Plateau in Victoria’s high country. The beautiful vineyard resources we have at altitudes over 780m above sea level, the finesse and elegance of pure Chardonnay cuvées, and the complexity drawn from méthode traditionnelle are all on show in this exclusive release.

Wine Profile

TASTING NOTES On opening the wine presents with a pale straw colour, very fine bead and persistent mousse. Pretty white flowers, lime blossom and pear aromas overlay toast and grilled nuts. Palate complexity with hazelnut praline and toasty patisserie characters from the yeast ageing are balanced against the orchard fruits of pear and quince and subtle vanilla on the long, persistent finish.
VINEYARD As one of the coldest vineyards sites in Australia, the Whitlands Plateau benefits from altitude as well as the cool air drainage from the plateau itself. The lofty exposure is complemented by red basalt ferrosols, special soils which frequently produce wines of great personality and enduring ageability.
WINE MAKING Chardonnay grapes from these Whitlands vineyards were picked mid-March. Several parcels of Chardonnay were pressed and fermented separately to ensure the unique characteristics of each batch and diversity of fruit were retained. Each individual cuvée was then selected for its flavours, balanced structure and palate length – all essential for any Chandon Vintage Blanc de Blancs style. Following tirage and secondary fermentation, Chandon Whitlands Plateau Vintage Blanc de Blancs 2013 spent over 42 months ageing on yeast, an essential part of the méthode traditionnelle process.
Food Pairing Notes Spaghettini with crab and chives; Veal saltimbocca; Chevre salad with walnuts
Other Notes Good winter and early spring rains provided perfect conditions for strong shoot and leaf growth. As a result, fruit was protected from the summer heat. While late January through to March will be remembered as being warm, night-time temperatures were relatively cool, aiding acid retention and slow ripening.
